Build out Bulk Edit feature to include "Viewing Direction", "Viewing Hint", OCR Language, Portion Note #6883

Summary (Product Owner)
This feature would be incredibly helpful for our Near/Middle east and SA collections, as well as EAL requests. Periodicals that need to be viewed 2 up would also benefit from this enhancement, giving agency to figgy users to batch enhance their collections.
Specific use case: we could use this on the ACO materials ingest - all of which are arabic or arabic/persian languages.

Please include hard deadlines, if the exhibit is part of an event, the issue is stopping work, etc.
It would make our users lives easier to do this in batch versus individually. It would make DLS / @escowles lives easier, as it would take those requests out of their queue for scripting.

Expected behavior (Product Owner)
I expect to be able to select a collection, and batch edit that collection using the blue "bulk edit" button and options on the screen". I would want to set my viewing direction and Viewing hint for the selected corpus.
