Add functionality to carbon copy package to image stack

Presently the setup is to launch a Rocker container or build onto one and mount the local user config settings. Need to build into the function to copy the local working into the image stack. Allows for improved portability and computational reproducibility.
Separating this allows for the separation of environment and package development choices.

I have updated the script so its a little more streamlined. The toggle preview = TRUE as the default will initialize default settings to preview rstudio and mount local config settings to preview in the browser.
