install.sh script no longer functions properly.

This links back to Debian no longer really wanting people to use pip.
The script to install this software then fails.

On the face of it we could just apt-get install python3-png and python3-serial instead..?

I think the correct thing to do would be to install into a virtual env.

Possibly the more correct thing would be for us to package up using uv or some similar ship-a-script-as-an-app-kinda approach so plasma can be run with (almost) one line.
