Upgrade package version dependencies to a newer date?

The package versions in the renv lockfile are getting a bit old, and inconveniences about these are starting to add up. If you would upgrade to use newer package version for the app, this would solve several issues:

1. It would fully fix Fix shinytest2 tests #843
2. It would fully fix a current issue with the repo that the renv snapshot cannot is broken because the renv version is too old (see issue here )
3. riskmetric dependency can be updated to a stable version released on CRAN since this year (0.2.5), instead of depending on a development version
4. You could use the same snapshot date for all packages, enhancing reproducibility and mitigating possible package incompatibilities (see here)
