Save displacement variances for each epoch during reformatting

The variance of each displacement data can be useful to have pre-computed (e.g. for doing a weight-least-squares velocity fit).
Since we are loading each epoch anyway, we can save this during the initial setup rather than requiring that user loads the whole epoch (which is different than the loading pattern for normal velocity calculation)
