Write a blog post: Running OpenEverest on my Laptop

The idea

We want to show the world that OpenEverest is easy to run anywhere - even on a local machine. We need a blog post that walks through setting it up on a simple local cluster (like Minikube, Kind, k3d, or Rancher Desktop).

Structure ideas:

1. Try it out: Install OpenEverest on your local machine.
2. Log it: Write down the commands you ran and the steps you took.
3. Show it: Take a screenshot of your running database.
4. Share it: Submit a PR with a markdown file.

Note: If you broke something or hit an error, write about that too! We love honest "how I fixed it" stories.
