New metadata field: copyright retention

It could be useful for authors to know what the copyright retention policy is for the journal (author retains restricted or unrestricted copyright).

We should probably also ask ourselves if we want to include journals where authors only retain restricted copyright.

Speaking from my own limited perspective, I'm not sure if copyright retention is necessarily a high priority when deciding where to publish. I could be wrong about this, and I wonder if this is perhaps more relevant beyond my own immediate context of work. My ignorance (see below) on what copyright retention really means in relation to oa probably shapes my opinion on this.

This information is available on DOAJ and we do link to those records, though it's not obvious that it exists over there. We should probably update the documentation to identify what information is readily available through other related resources that we might not carry over (speaking in general, not necessarily with regards to copyright retention info).

As for refining the scope based on copyright protection, I'm not sure how it relates to permissiveness of access and the ideals of what constitutes diamond oa. I honestly don't know enough about it to have much of an opinion either way. Can you please share any links, resources or reasoning regarding why this should or shouldn't be a factor in defining the scope?
