[Task]: Consider migrating to `yara-x`

Description

yara-x is a newer version of yara (by the same authors) and we should probably migrate to it: https://virustotal.github.io/yara-x/docs/intro/yara-x-vs-yara/. While there might not be much good reason besides yara-x being the future, adopting yara-x would allow us to potentially expand our yara capabilities.

It's not a drop-in replacement but for our purpose it should be backwards-compatible (hopefully). We could try to add it in parallel to the existing yara, maybe switching between the 2 using a waffle switch ?
