[MAINT] Add a folder for scripts which are related to the extraction of data from the exe

It would be convenient to have the scripts which are used to extract data from the exe using both IDA and Ghidra so that they can be maintained from one single location, and so if others are interested in assisting in the mapping of files they may do so.
It might be nice to include some details of how the scripts work so that others know how to use them.
