Switch to the explanation interface for all examples

Please use the `.explanation` interface for all future example, since this will (hopefully) become the standard interface for how mindsdb outputs predictions come v2.0

If you have time, refactor current examples to use this.

Note: .explanation is a member of each TransactionRows (the elements in the list of predictions that `.predict` outputs).
