[DOC] rename "theoretical index" --> "target quantity"

I find it more intuitive to use the term "target quantity", in particular for sparse linear models, where describing the coefficients as "theoretical index" does not sound natural. WDYT?

No strong feeling, but "target quantity" sounds good (it least it makes it explicit that this quantity has to be defined !)
