Preparing a new release

We still have some work before a new stable release, but we should prepare for it.

Where should we distribute matterbridge:

• Archlinux AUR
• Docker on ghcr.io
• Debian's Debusine
• AppImage?
• NixOS nixpkgs?
• GNU guix?
• Flathub apparently denies CLI programs
• Ubuntu Snap?

What should be the next version:

• v1.27 ? following previous versioning scheme
• v2.0 ? because we have breaking changes, and a major version is more explicit about the governance change

In all cases, we should release at least a beta version, then one release candidate.

TODO migrations:

TODO other changes:

2.0 is probably warranted, especially if we manage to get this into distribution repos so that people don't just update blindly.
