Review Config Names

Now that all the config values are centralized, we should consider changing up some of the names.
For example, all the evaluation options can go under the eval prefix.

The fix itself is easy, but all other PSL usages (like psl-examples) need to be updated.

In the change log, we will need to make a mapping of all the changes names.
