How much usable entropy is output to /dev/random?

On proxmox/QEMU there is an option to pass a VirtIO RNG to a VM host.
What can be sane numbers to use here to utilize the Infinite Noise?
Is the entropy pool being starved if using too high limit?
I use the standard systemd service configuration of infnoise from the debian apt repository.

This largely depends on the used kernel version. On recent Proxmox versions with kernel >= 5.15, both /dev/random and /dev/urandom will provide entropy fast enough, regardless what is set here. The TRNG will provide high quality seeds for /dev/random from time to time in this case, which is favorable.

These days, you only need to be careful, if you'd use /dev/hwrng as a source here, which I'd therefore discourage. You can safely use /dev/random on current kernels. It will only block initially until being seeded once.
