[AcademyAI] Migrate virtual environments to UV #68
Description
Currently the virtual environments used in the workshops related to the Academy AI are declared using vanilla pip or conda, relying only on requirements.txt files.
In 2025, a new package and project manager emerged as and it's called uv.
Since it seems that it will be the next market standard and due to the educational nature of these workshops, it would be great to migrate it to this standard.
