Follow migration from mkdocs to Zensical

Several things happening on this documentation space:

• Material for MkDocs is now in maintenance mode link
  • at the same time, Material for MkDocs 9.7.0 includes all features previously on the Insiders program link
• mkdocstrings is also in maintenance mode link

Migrating completely to Zensical seems a bit premature, at least until the API documentation can be included (see here). Maybe we'll also have to wait for some of the plugins we are using to be ported, or reconsider their use.
