Rename the project

The name jupyterlite-ai is misleading, since this extension also works with JupyterLab. And does not have much to do with JupyterLite except that it can also be used there.

So it would be great to find a better name.

In addition, the repo could also be moved to another organization, such as jupyterlab-contrib or jupyter-ai-contrib.

I have some names in my mind

lablite-ai: Explicitly bridges the gap between the two environments.

jupyter-brain: Simple, though perhaps a bit overused in AI.

omnijupyter-ai: Sounds modern and suggests all upcoming compatibility.

I could even see it in jupyter or jupyterlab orgs. jupyter-ai-contrib might be fine too if that makes collaboration/cross-compatibilty easier (but I don't think this belongs in jupyterlab-contrib which is in a sense lower maintenance promise tier/unofficial which makes it harder for some folks to contribute)

Maybe we should also keep in mind that this project will probably be split in several packages as a monorepo sometime soon #38. This renaming is probably about the extension, but there will also probably be a javascript package for the browser agent.

I think jupyter-ai-serverless makes the most sense and communicates the distinction between the two very clearly.
