Basic sweet French crêpes

Ingredients

  • Flour: 1.75 cup
  • Eggs: 3
  • Sugar: 2 tbs
  • Milk: 1 cup
  • Sparkling water: 1 cup
  • Butter: 2 tbs
  • Vanilla extract: 1 tbs
  • Salt: 1 pinch

Steps

  1. Melt butter and let it cool a little bit.
  2. Combine milk, water, eggs, butter and sugar in a bowl.
  3. Start adding flour with salt to the bowl while stirring with a whisk or a mixer.
  4. Mix until fully combined.
  5. Heat up the pan on high and then lower it to mid-high.
  6. Add a little bit of oil on batter before the first frying.
  7. Add around 80-100 ml of the batter to the pan and spread evenly across it.
  8. Fry for 1-2 min per side until some parts of the crepes get brown.
  9. Turn heat up between portions to maintain the pan temperature.
