go-libp2p v0.44 logs not present in `ipfs log tail`

ipfs log tail does not return logs from go-libp2p's slog.
#11033 is only printed to stderr of ipfs daemon, but not returned by log tail RPC.

This breaks recently added Log viewer in the diagnostic screen (ipfs/ipfs-webui#2392), making it impossible for people to monitor things like nat or identify systems from libp2p.

This is a bigger mess than expected, a regression we need to fix to unblock Kubo 0.39.
The regression was introduced in

• feat: Migrate to log/slog libp2p/go-libp2p#3364

Requires proper fix in the shim in go-libp2p and go-log itself.
I wave working one locally, just need to add tests that ensure we dont have such regression in the future.

• Linked PRs will get us out of the issue for the moment
• Need to be merged upstream in libp2p
• Long-term strategy to be discussed, might involve moving to slog.
