MLKit Does not support arm64 simulators

MLKit still in 2024 doesn't support arm64 native simulators for xcode, therefor I propose under the hood, this library should use Apple's Vision SDK on iOS.

@angelo-hub you can fix it by:

1. Open your ios/Podfile
2. Add the following inside post_install:

post_install do |installer|
  installer.pods_project.targets.each do |target|
    target.build_configurations.each do |config|
      config.build_settings['EXCLUDED_ARCHS[sdk=iphonesimulator*]'] = 'arm64'
    end
  end
end

3. cd ios && pod install --repo-update

This tells Xcode to exclude arm64 for the simulator, forcing it to run on x86_64.

@il421 @gev2002 I actually was able to port it via a handful of patches! the lift isn't too much. I can open a PR later this week when i get time to fork the package.

Doing the exclude architectures works in the short term but frankly at this point with 5+ years of apple silicon and the deprecation of rosetta 2 coming within the year, this needs to be ported or Google needs to update MLKit to modern architecture support.
