[Structured Logs]: Make sure native transport can process log envelopes

Description

On mobile we use the native transports to send envelopes and depending on the implementation we might be blocked by the SDK impl or have to open a PR to support log envelopes.

• Android: requires SDK 8.12.0
• iOS: requires SDK 8.51.0

Sentry Cocoa 8.51.0 release will happen today, I'll merge it into Flutter once it's out
