feat: Switch Mailhog to Mailpit #119

I WANT to be able to capture and review emails sent by the application
SO THAT outgoing communications will be successful.
✅ Acceptance criteria
- Mailpit is started up with the rest of the stack the way Mailhog does now
- The UI is accessible at http://localhost:8025

- Mailhog is no longer maintained
- https://mailpit.axllent.org/
- It looks like it uses the same ports as Mailhog:
- port 8025 for the web UI, and port 1025 for SMTP.
