Avoid using pre defined prefix separator if possible

Hi! I'd like to know if it would be possible to don't include a default separator like in @prefix_separator, so I can pass a custom one through the prefix option. For instance, passing prefix: "usr-" or prefix: "usr_". This is backward compatible and adds a little more flexibility.

In your app, do you use shortcodes with different separators that need to be changed at runtime, or is the separator always the same?
If it is always the same, I propose to add it as a setting.

config :shortcode, prefix_separator: "-"

For my use case, having a global configuration is ok, but I think you are probably better off handling it as a runtime option if it's all the same to you (https://hexdocs.pm/elixir/main/design-anti-patterns.html#using-application-configuration-for-libraries).
