Issues setting up new environment

Some problems with getting the right packages loaded, conda install of torch seems to be broken on sherlock

I changed the readme and the installation instructions. Didn't error out but wasn't able to figure out a config that also kept torchtext. It seems like torchtext is only used in a couple of places in the safari dataloader.

I looked at some replacements, but spaCy seemed to require numpy <2 and that seemed suboptimal.

It also seems like the data is no longer in the /scratch/groups/swl1/SpeechBCI/competitionData directory. I installed it in my OAK account, but I wasn't able to move it to the correct directory in scratch for some reason.
