fix foreground and overlay plotting

Problem:

1. Foreground plotting is broken see here
2. Overlay plotting capability is broken. When we try to overlay plots they get overwritten instead.

Solution:

1. Move to more object oriented usage of matplotlib.
2. Fix bugs one at a time, with the goal of reproducing intended behavior of kappa, shear, background, and foreground plotting
