Bug: UniswapV3 integer underflow on simulate_swap

### Describe the bug

During certain simulate_swap operations [this line](https://github.com/darkforestry/amms-rs/blob/07f0e772ecf1e7a619ff8477fc12961d40ae3807/src/amms/uniswap_v3/mod.rs#L379) panics with an integer underflow, causing programs to crash. I am currently investigating the causes.
