Replace the 999 hours flag with a more explicit option for retrieving all records in the Process option of AWS Realtime dialog

Over the years we have used 99.... series as an indicator of infinity or missing data flags. I would prefer doing more elaboration on manual and help documents rather than changing to something else that might open a bigger debate. However, a debate is welcome.
