Investigate whether the `columns` mapping of to_sql/to_df should be inverted

Some requests have been made to flip the columns argument to so it is in the form {"old_name1": "new_name1", "old_name1": "new_name2", ...}. Goal of the issue:

• Determine if this switch should be made
• Implement the change & document it
