Add ability to specify which services the node serves

I'm looking to adopt this image, but it appears we need this functionality. Did you happen to make any forward progress on this?

There's nothing implemented for this, but the relevant part of the code is in https://github.com/autopilotpattern/couchbase/blob/master/bin/manage.sh#L175. A PR that adds environment variables (and sanity checking) for that would be ideal.
