[IcebergIO] Add ITs for RESTCatalog using BLMS

Catalog currently only assumes JWT tokens.

Still need to find a solution that allows us to pass application default credentials to the catalog

Updated to Iceberg 1.10.0 since, and can use GoogleAuthManager
