Documentation for the schema of workflows

Currently, the documentation for the workflow schema is limited.
Someone needs experiment a lot (and usually with not a lot of success) on how to create workflows that are similar to the ones created by the GUI.
The fact that the list/export of them changes the order makes it very difficult to "reverse-engineere" it.

For example, how do we create workflows like the following:
