Currently users are either a participant or not, with no qualifiers. Look into adding different types of participants, such as "lead", "watcher", etc. It may be useful to be able to have multiple participants get email updates, but still have it be clear who are the main people working on the project.
Alternatively, allow users to be emailed for all projects in the lab, or to subscribe to project emails, whether they are a participant or not.
