Add logging to playbook executions

Add some logging when running Ansible commands on the system, will be useful for troubleshooting.

• Run typescript as part of script?
• What logging capabilities does Ansible have?

Looks like there's a default log path to add to the configuration.

Not exactly sure what typescript gives us in this case.
