I've been playing around with IDevice::SBSClient in irb to explore the springboard functionality available in libmobiledevice. At this point, I can successfully attach to my iPhone 4s and 5s, both running iOS 7. I can get the multi-dimensional array of icons back by calling get_icon_state and examine the contents of the arrays easily. However, I'm noticing there appears to be no support for iOS folders. As far as I can tell, they are simply missing from the arrays. I suspect this is an issue with the underlying capabilities libmobiledevice, but I'm wondering if you guys have tested this with recent versions of iOS. Let me know if you need some more detail here.
