Ability to use alternate typing library on demand

Right now quicktype is used but has not seen any activity for a while now.

It is used in only 1 place:
https://github.com/acr-lfr/generate-it/blob/master/src/lib/generate/generateTypeScriptInterfaceText.ts

Can this single file include another library on demand? Maybe declared in the rc file.

We could say we support these 2 libs and the default is quicktype

This idea was spawned from a PR from @zewish glideapps/quicktype#1789 on quicktype but not getting any response in a while.
