Providing a simple preview docker-compose

A request addressed on our AccsoConference.
It is currently not possible to do a simple docker-compose up to play around with the solution and to test it simply out.

Someone reported on a half day setup. This should not happen.

mainly by providing a docker-compose-preview.yml (and only for this version resolving the .env usage).

I didn't found a docker container for the react frontend so did some agentic coding which also did some changes in the
frontend code. Currently however, I managed to get the login formular, but there seems to be no working event-handler firing on commit. I'm also not quite sure, if I get the endpoint URLs between frontend and backen calls sorted out with the agentic coding approach correctly. Can you help with getting the frontend part working? If we have this I can rewrite some part of the documentation and the task is done.

We would end with three docker-compose versions:

• A preview one, as demanded by the ticket to check things out.
• A devloper one (the default) which offers only the parts up to the database, so that backend and frontend can be worked on locally
• The existing ci - Version, though I'm not clear about the indented usage. I would expect, that ist only contains the adapter part for projects CI, where the frontend and backend are running in some Kubernetes environment.
