I think if it would be neat if you could leave this running on a display and see as things are committed in real time.

Use gource --realtime with a Log File
Use Gource’s --realtime mode with a log file that you update manually or via script.

gource --log-format custom --realtime updated.log
Then have a process that appends lines to updated.log as commits are made. You can parse recent commits like this:
git log -n 1 --pretty=format:'%ct|%an|A|%f'
