What you're seeing above is max-width being set to a default value that's set in global theme settings.
It's pretty common to have a page width global value set. Same applies for a number of other settings. What's the thinking behind not allowing values like this to be set?
We could just do it the usual way and have the style settings be overriding the defaults but what I showed above seems more natural.
