Add information on how to use LA100-P to current sense board documentation

The current sense board documentation describes how to use the LA50-P current transformer, but increasingly, we are also using the LA100-P current transformer to reach higher currents. Let’s update the documentation to describe how to use the LA100-P. This will involve editing the docs readme Burden Resistor and Current Sensors Gains subsections.

While the LA55-P talks about a sensing range of +-70A. Let’s write the documentation for 150A for the LA100-P.

Please also add the LA100-P to the BOM CSV file.
