Update Environment/Schema Mapping Setup

The current setup requires schema maps (See: https://github.com/LibertyDSNP/graph-sdk/blob/main/config/README.md and https://github.com/LibertyDSNP/graph-sdk/tree/main/config/resources)

We would like to eliminate the reliance on this and instead have easier ways to pull the correct configuration from the attached chain or other such setup.
