Add Unit Tests

Create at least a basic testing strategy, with the goal of eventually reaching full coverage.

Two possible paths:

1. Mock out all calls to Eliza
2. A bigger lift but more useful -- create a test runner for eliza plugins inside the eliza repo, and then use it in here.
