Reset parquet indexing

When loaded, parquet files retain their original indexing. The parquet files in data-catalogs, as they stand, have not had their indices reassign, or reset. Therefore, the current indexing is scrambled and causes issues when loaded into anvil. This data loading issue was fixed within anvil, to ensure the indexing wouldn't be an issue; however, we should reindex the available parquet files within the repo as a measure to clean up the files.
