Move from pyuv to uvloop?

I had trouble installing this earlier because `pyuv` installation would fail (there are no wheels for recent Pythons). It looks like [pyuv is no longer maintained](https://github.com/saghul/pyuv/issues/270#issuecomment-925106097). Would we consider moving to uvloop? I'd be happy to make a PR.
