Build some real collections for demo

So the database it populated with a bunch of test data. Is it too early to start creating some real collections so we have something more to show when in demo?

This is a good idea, we're getting to the point where it would be helpful to have real data in collections. @danielstreit can you clear our the mongo database so we can start over?
