[Bug] docker-compose corruption and phala cli version mismatch

- The `replaceInYaml` function in docker.js uses a slicing method that corrupts the docker compose file if restart: always is present.
- Also, the CLI is hardcoded to `phala@1.0.35` which uses the deprecated cvms create command, causing schema validation failures on the server side
