Extend the execution matrix for the integration tests

Description

Currently the execution matrix for the integration tests is very limited (ubuntu22, rocky8 and rocky9).

Questions/Ideas

We should extend this matrix and add windows (2022, 2025), macos (13 to 15) etc...
