Add more documentation to Extract, Transform, Load course

In recent feedback folks requested more documentation. I agree that some of the later sections could use more and I would like to add more in future.

Great. The release of the Academy will also be postponed to mid April (subject to change). Feel free to make any additions in the meantime in the development environment.
