I'm writing a cask definition for home-brew, but it is failing the audit because the app is not getting signed.

Do you know if signing apps requires that 100$/year Apple thing? Or maybe we can ask the Jellyfin developers to share their certificate stuff so that there is no need for both projects to shill out to Apple.

Very small chance of this happening considering they like to keep official/un-official clients separately.

Homebrew requires signing all apps in the public repo. However looks like it's possible to add a custom "tap" with unsigned applications, maybe that's an option?

Yea, that's possible. Just need a well named one that people can know about and that gets updated frequently.
