There currently is double tap to seek forward and backward and to pause/play. So I would say this is partially complete Whats left is:

Summary
Having swipe gestures to control brightness, sound or even seek would be better for immersion.
Basic Example
It is supported on basically on every media player on android. Jellyfin itself has gestures support.
Drawbacks
I don't see any drawbacks, it is a standard media player feature.
