Rethink `summarize()` default behavior

A few questions about this:
1) Should anything be displayed other than the levels and `n_reps`? We used to display column means.
2) Should there be a shortcut for displaying "all means", "all variances", etc.?
3) How do we handle character return values? (probably should just ignore them)
